Sweet Potato and Pineapple Bread Pudding

About the Recipe

Simply delightful blend of sweet pototes and pineapple accented with vodka soaked golden raisins.

Ingredients

1 loaf stale French bread (If the French bread is fresh, cut into cubes and let air dry until crusty)

1- 8-ounce can of pineapple rings, grilled

1 cup golden raisins, soaked overnight in GO3 Vodka

1 cup of small-diced sweet potato

1 teaspoon cinnamon

1 teaspoon nutmeg

2 teaspoons of vanilla

3 eggs, beaten

½ cup white granulated sugar

½ cup packed light- brown sugar

1 quart half and half or 1 can of coconut milk

1 stick of unsalted butter

1 cup GO3 Vodka

Extra touch: add grilled pineapple rings on top and top with toasted coconut


Preparation

  1. Cover raisins with Vodka in a glass jar or an airtight container. Soak raisins overnight at room temperature.

  2. Peel and small dice sweet potato. Place into a small saucepan, cover with water, and bring to a boil. Drain and allow them to cool.

  3. Drain pineapple and set aside juice for later. Grill 6-8 pineapple slices on a cast-iron griddle or pan. Allow the pineapple to caramelize on each side. Cut the rings into pieces. Note: Save a few for the top if desired.

  4. Cut or tear French bread into 1-inch pieces, set aside to uncovered to air dry.

  5. Beat eggs and Half and Half or Coconut milk; add cinnamon, nutmeg, and vanilla. Add in 3 ounces of Vodka. 

  6. Soak bread cubes in egg and milk mixture until most of the liquid is absorbed.

  7. Melt one stick of unsalted butter and add it to the bread mixture.

  8. Fold in the raisins, pineapple, and par-boiled diced sweet potato into the softened bread mixture.

  9. Place in a 2-inch, 9 x 13 baking dish. Bake at 250° for 50 minutes; turn the oven up to 350° and bake until the top is browned & crusty.



    Vodka Pineapple Crème Sauce

    ¼  cup Vodka

    ½ cup reserved pineapple juice

    2 cups of powdered sugar


    Instructions

    1. Combine ingredients in a small mixing bowl

    2. Whisk together thoroughly. Be sure there are no sugar lumps.

    3. Drizzle over warm bread pudding and serve.
